Chocolate – The Amazing Superfood

The history of chocolate begins in Mesoamerica, dating back to 1900 BC. Originally served as a frothy beverage mixed with spices and wine or corn puree, it was believed to be an aphrodisiac and give strength to those who consumed it.
Chocolate comes from the cacao bean. To make chocolate, the bean is roasted and then refined into liquor and blended together with sugar, coco butter, an emulsifier (like lecithin) and sometimes milk (as in milk chocolate). In its raw form, it is considered a “superfood” and a very powerful antioxidant. Antioxidants neutralize free-radicals, which are damaged cells that can damage healthy cells and cause sickness and disease.
Unfortunately, once the cacao bean has been refined, it loses some of its healthful properties. Therefore, the healthiest form of chocolate is the unrefined cacao bean. You can find raw cacao in powder or “nibs,” which is simply broken up cacao beans. Raw cacao is very bitter to taste, which is why they are typically refined and sweetened with sugar. However, try adding the raw powder to a protein shake and the nibs to your morning oatmeal. You can also add to salads and desserts for an extra boost.

When purchasing chocolate in its refined form, choose a higher percentage of cacao that will offer more antioxidants. The higher the percentage cacao, the more bitter and healthier the chocolate. A great compromise is around 70% cacao, as it offers antioxidants with a nice balance of sweetness.
For those who like milk chocolate, sorry to say, it does not contain the healthful properties of dark chocolate. Milk chocolate is created using a completely different process and contains a lot more sugar and fillers, making it unhealthy instead of healthy. If you prefer milk chocolate, try weaning on to dark by selecting chocolate with a lower percentage of cacao and working up to 70 or 80%.
In addition to being an antioxidant, cacao is packed with other healthy compounds like flavonoids and theobromine, helps to regulate blood pressure and relax bronchial muscles. Cacao has also been shown to reduce LDL cholesterol, prevent cognitive decline and provide a positive mental state. Does this mean you should eat all the chocolate you want? NO!!! Most studies indicated that just one serving per day is sufficient to achieve results. But, beware of sugar! Strive for less than 13 grams of sugar per serving, and ensure artificial ingredients are not present.
Personally, I only eat 1/8 of a bar at a time. My favorite brand is “Endangered Species.” I also like “Theo” and “Green & Black’s.” For nibs, I get either Navitas or TerrAmazon. For powder, I get Navitas, or CocoaWell. Note that CocoaWell also contains other natural ingredients that make it an exceptional product. There are other acceptable products, as well. Look for fair trade and USDA organic brands.
If you get the right kind, chocolate can be a delicious, healthy treat that you can have pretty much every day. I encourage you to explore different ways to use and enjoy it!
